1. Preheat oven to 375 degrees.
2. Cook filling until thickened. Cream margerine, honey and sugar. Add eggs and mix well. Add flour and baking soda alternately with soy milk, then add oatmeal.
3. Roll out on floured board, cut with cookie cutter. Put one teaspoon of dough filling on cookie and cover with another cookie.
4. Bake at about 375 degrees for 10 to 15 minutes.
