Mahogany Glazed Salmon


  • 4 (6oz) salmon fillets

  • 1/2 cup plain non-fat yogurt

  • 2 Tbsp light-sodium soy sauce

  • 1 Tbsp olive oil

  • 1 Tbsp fresh minced ginger

  • 1 Tbsp lemon juice

  • 1/16 tsp. freshly ground black pepper

  • 1/2 Tbsp fresh chives

Prep Time: 30 min

Cooking Time: 5-10 min

In a shallow plate or glass bowl mix together the non-fat plain yogurt, light-sodium soy sauce, olive oil, lemon juice and ginger. Lay the salmon on top and turn over to coat with the marinade. Cover and set aside for 20-30 minutes.

Remove from the marinade and broil the salmon about 3 inches from the heat until browned on top and cook until just done (4-5 minutes). Remove and place on warm plates. Serve immediately sprinkled with chives if desired.
